Triple Chocolate Cake

Ingredients

Place in a large bowl and mix

  • 500g flour

  • 500g sugar

  • 80g coco powder

  • 10g salt

  • 10g baking powder

place in a bowl over simmering water and melt

  • 500g butter

  • 400g milk chocolate


  • 100ml milk

  • one espresso

mix together:

  • 8 eggs (beaten)

  • 300g fromage frais

for the topping

  • 400g dark chocolate

  • 400g milk chocolate

  • 250ml 38% cream

  • 100g fine sugar


Preparation

  1. Preheat the oven to 160 oC

  2. Once the chocolate and butter have melted, add to the dry ingredients

  3. Immediately add the eggs and fromage frais

  4. mix gently until smooth

  5. Split equally between two 30 cm round baking tins

  6. Bake for 1hr and 10 minutes at 160 oC
