
Roast Pepper Hummus

Ingredients
500g dried chick peas (soak for 24 hrs. in cold water)
4 large peppers-red & yellow (deseeded and cut into 1/4s
one large onion (peeled and cut into 8)
one bulb of garlic
juice and zest of one lemon
100ml olive oil
salt and pepper
Preparation
rinse the soaked chick peas in cold water, cover and simmer for one hour, until soft (allow to cool in the water)
coat the peppers, onions and garlic bulb (whole) in 50ml of olive oil
roast in a very hot oven 220oC for 30 minutes or until the skin of the peppers begins to turn black (this blackening is the natural sugars caramelizing-this creates the unique flavor)
add the roasted peppers, onions, the remaining olive oil, lemon juice and zest to the chick peas. squeeze in 2/3 of the garlic into the mix and then puree until smooth
add salt and pepper and additional garlic if required
NOTE: add salt and pepper, taste at least 3 times, you will taste the flavor increase each time you add more salt and pepper
