Ingredients

DOUGH

  • 500g "00" strong flour (get the highest protein content flour you can find)

  • 7g dried yeast

  • 7g salt

  • 7g sugar

  • 2 gloves garlic (finely grated)

  • Fresh basil leaves (chopped)

  • 200ml water (approx)


SAUCE

  • 250ml passata

  • 25g tomato paste

  • 10g sugar

  • 10ml viengar

  • 3g dried oregano

  • salt and black pepper

NOTE: the sauce should be an "intense" flavour as it flavours both toppings and base


Preparation

DOUGH

  1. mix all the dry ingredients together and slowly add the water until you get a "dough" texture"

  2. knead hard for at least 5 minutes-until the dough breaks apart easiliy

  3. leave for 24 hrs in the fridge


SAUCE

  1. simply mix all the ingredients together in a bowl


IMPORTANT: add salt and pepper-taste- add more- taste and check- as you taste eaach time, you will sense the flavour increases-I always add salt and pepper at least 3 times
