Ingredients
DOUGH
500g "00" strong flour (get the highest protein content flour you can find)
7g dried yeast
7g salt
7g sugar
2 gloves garlic (finely grated)
Fresh basil leaves (chopped)
200ml water (approx)
SAUCE
250ml passata
25g tomato paste
10g sugar
10ml viengar
3g dried oregano
salt and black pepper
NOTE: the sauce should be an "intense" flavour as it flavours both toppings and base
Preparation
DOUGH
mix all the dry ingredients together and slowly add the water until you get a "dough" texture"
knead hard for at least 5 minutes-until the dough breaks apart easiliy
leave for 24 hrs in the fridge
SAUCE
simply mix all the ingredients together in a bowl
IMPORTANT: add salt and pepper-taste- add more- taste and check- as you taste eaach time, you will sense the flavour increases-I always add salt and pepper at least 3 times
