Balanced Frittata

Ingredients
250ml low fat fromage fraise
250ml low fat cottage cheese
100g hard cheese (grated)
6 eggs
100g potato (1cm dice)
100g red pepper (2cm dice)
100g cherry tomatoes (cut in half)
100g red onion (2cm dice)
100g zucchini (2cm dice)
100g spinach
3 cloves garlic (finely sliced)
10g smoked paprika
20ml olive oil
Preparation
Fry all the vegetables until golden brown in a 30cm frying pan
Mix the fromage frais/ cottage cheese and eggs, pour over the vegetables and top with grated cheese
Bake in the oven for 40 minutes
